A sweet twist on classic guacamole made with blood oranges and crispy kale and topped off with sunflower seeds for an extra crunch!
What a week guys. I had my first MRI yesterday, and it was terrifying. I’m a pretty tough, independent chick, but I have three main fears: snakes, small spaces, and small talk. So yeah, that was a rough endeavor.
In other news, I love guac. I would be ok with having more MRIs if you could eat guac while you’re in there. Hopefully that is the future of modern medicine. Guac for all uncomfortable and scary medical procedures. If we could even get multivitamins and medications embedded in guac I’d be down for that.
I created this awkwardly wonderful spin on guacamole to get me through the “no tomato” phase of my gut healing protocol. I just started eating tomatoes again last week, but up until then I needed a guac substitute (because I don’t believe in guac that is just smashed avocado and salt. That is still a wonderful substance, but it is not guac.) I have a grapefruit guac recipe way back in the blog archives (before I knew what I was doing in terms of food photography) but now I’m not supposed to be eating grapefruit… so we needed to pivot. Blood orange turned out to be the perfect solution to my problems. I take back all of the mean things I’ve said about fruit.
Also, I love eating guac with cucumbers. But sometimes cucumbers just don’t give you the same crunchy satisfaction of a chip. But I found the answer: sunflower seeds. Yup. Stick some sunflower seeds on your guac and you have a crunchy, salty situation, even sans-chip.
Blood Orange Kale Guacamole
- 2 large avocados halved, seeded, and peeled
- Juice from 1 lime
- 2 blood oranges sliced, removed from membrane, and cut into chunks
- 1/2 cup finely shredded kale
- 1/4 cup chopped fresh cilantro
- 1 clove fresh garlic minced
- Salt and pepper
- 2 tbsp sunflower seeds
Place avocado and lime juice in a bowl and mash well with a fork. Add in blood orange, kale, cilantro, garlic, salt and pepper. Stir to combine. Garnish with sunflower seeds!
