A comforting, warm coconut curry that comes together in 20 minutes (Paleo, dairy-free, and keto too)! Perfect for nights when you want healthy comfort food in a pinch.
Good morning sunshine! Welcome to Monday. It’s Sunday when I’m writing this, so I hope we both managed to set our alarms, wake up on time, get in a great workout, and feel ready for the week. Or I hope I manage to do that? Talking about myself in this time-travel-tense is awkward. Don’t you remember that from English class? Time travel tense. Totally a thing.
I know we usually talk about TV on Mondays, but I actually didn’t watch much this weekend. I know, I don’t really believe it either. I shot 6 recipes and stayed home all weekend, but spent most of it talking with Hudson and listening to the Fed and Fit podcast. I’m binging that one hard-core right now. I think my brain needed some realism after last weekend when I binged two (ok… almost three) seasons of Schitt’s Creek. The stupidest yet most hysterical show ever. It’s kind of like The Three Stooges, except with overpriveledged white people hipsters in 2018. Ok so basically The Three Stooges plus the SNL Californians sketch.
Beyond cooking for you guys, I also placed a Thrive Marketorder, which Im super excited about. I’m going to have a post soon about all of my favorite Thrive finds and how much money you can save by using them. If theres one thing I love more than good food, it’s free or inexpensive good food. Obviously. I’ve been super craving Siete chips, but don’t want to pay an arm an a leg for them at Sprouts, so I’m happy to wait for my happy lil Thrive Box. Cuz then I’ll have money for — you guessed it — more chips.
I had a really good week energy-wise last week. I woke up before my alarm most days, my stomach felt good, and I wasn’t overly sore by mid-week, which is usually when I feel like I got hit by a bus. I have my fingers crossed that this means I’m doing something right diet wise by following the 4R Protocol so closely. It’s funny how easy it is to follow any given food plan, no matter how restrictive, when you’ve felt awful for most of your life. I’d have no problem if I suddenly had to drop something like nuts (although that doesn’t leave me with much) if it meant my gut would heal and I’d stop experiencing chronic head fogs. It’s funny what perspective can do to our ability to change.
But enough about me. Let’s talk about this creamy coconut curry.
I luuurrrrve curry. It might be my number one favorite meal. The problem is, I’ve gotten sick every time I’ve eaten out and ordered it. Every time that happens, I invent a new curry a few days later to redeem my love for the dish. It’s such a great naturally Paleo or Keto meal when you just stick to creamy coconut milk, good quality curry paste, and fresh protein and veggies. Sssssoooo good. Let’s cook.
Coconut Curry Poached Cod (for two)
- 8 oz cod pieces or filets
- 1 14 oz can coconut milk use full fat for extra creamy curry
- 1/2 cup vegetable or chicken broth
- 1 tbsp Thai Red Curry Paste use 2 if you like it extra spicy
- 1 tsp ginger
- 1 Tbsp coconut aminos
- 1 clove garlic minced
- coconut oil
- 1/2 green bell pepper sliced thin
- 2 large carrots shredded
- 1/4 cup sliced mushrooms I used cremini
- 1 large zucchini spiralized
Grease a medium sized skillet with coconut oil and place over medium heat.
Add garlic, bell pepper, and carrots to the skillet. Saute for 5-6 minutes, until softened.
Add curry paste, coconut milk, broth coconut aminos, and ginger to the skillet. Stir well to combine. Bring to a boil and then reduce to low heat to simmer. Add mushrooms, zucchini noodles, and cod to the skillet. Cover to let the cod simmer for 8-9 minute, or until flaky.
Serve and enjoy!
