Creamy Pumpkin Turkey Meatballs with Zoodles

These creamy, dairy-free Pumpkin Turkey Meatballs are the perfect nightshade-free pasta dinner for fall! Serve them over zoodles or your favorite gluten-free pasta. 

How’s your week going? Wait — I have a better question. How many tacos have you had this week? I’m on a solid 6 day taco streak. I think I might follow this through all the way to the Guinness Book of Records, whatever that entails. Siete Tortillas are changing my life, and I’m open to whatever that mean. Tacos every day always? Yes sir. No, this isn’t a sponsored post. I’m way too uncool to operate in that arena. But you already knew that, didn’t you.

Wait. I took Hudson on a walk to TJ Maxx to buy some new dog toys the other day, and I’m watching him tear a hole in his newest one right now. Darn it! At least I tried.  I held off as long as possible before spending money on more toys, but we had reached the point where there were critter body parts from his toys laying around the house. It looked very Little Shop of Horrors-Esque. The only brand I get anymore is GoDog because they usually last for a decently long period of time, but even the best brands only survive so long with this dog. So we get to the store, and the only GoDog left is a Santa Clause dinosaur. I’m too much of a softy to say no just because it’s not Christmas yet, so we bought it. What I didn’t know what that my dog apparently hates Christmas, and he’s been determined to get the Santa Hat off of this one from the minute we got it home. And it looks like Santa’s just been de-throned (and maybe also decapitated).

Now I’m kind of sad that my accidental Christmas decoration is gone, even if it’s only October. I freakin love Christmas, ok? It’s hard being an adult and living so far away from my family , but Christmas time means I get to go back and it’s just like being a kid and living at home with my brothers again. Except now we’re all more hilarious and eat more.

I have a confession: when I first moved to Arizona I was incredibly depressed and alone for two years. On some of my worst days, I used to go walk in circles around the Christmas Wonderland section at Target. I didn’t buy anything, but it felt like maybe I was in Connecticut and we were going to be decorating the house together that night. It just made me feel warm and happy inside during a time where everything else around me was brown, dusty, and unfamiliar. Sometimes we do irrational things to feel hopeful. At least mine is loitering by ornaments and not doing drugs.

But I suppose it’s too early to keep talking about Christmas. I’m ok with skipping Halloween, but we do need to respectfully observe Thanksgiving. Let’s rein things back in with some Pumpkin Meatballs, shall we?

There’s something magical about this pumpkin pasta sauce. It’s just the right amount of rich and creamy without being heavy, and it’s the perfect balance of subtle sweetness and savory spices.

You can lick the bowl if you need to. I won’t tell anyone.

Pumpkin Meatballs

Pumpkin Turkey Meatballs with Zoodles

PREP TIME 5 minutes
COOK TIME 25 minutes
TOTAL TIME 30 minutes
SERVINGS 4

INGREDIENTS

Meatballs

  • 1 lb ground turkey
  • 1/2 inch fresh ginger grated
  • 1 tsp rosemary
  • 1 tsp garlic
  • 1/2 tsp salt
  • 1 egg

Sauce

INSTRUCTIONS

  1. Preheat over to 400 F and line a baking sheet with parchment paper.
  2. in a large bowl, combine meatball ingredients. Roll into about 12 meatballs and bake at 400 for 12-15 minutes.

  3. Grease a medium skillet with coconut oil and place over medium-high heat. Add onion to skillet and sauté for 2-3 minutes to caramelize.
  4. Add coconut milk, pumpkin, salt, and turmeric to skillet. Simmer for 5-10 minutes while sauce thickens. Add meatballs to skillet and cover to let the meatballs warm up.
  5. Right before serving, add zoodles to the skillet. Stir to cover in sauce and let simmer for 5 minutes while the squash softens.
  6. Serve and enjoy!
