Egg Sandwiches with Kale Avocado Pesto

Im the pesto queen, in case you weren’t aware. After way too many months on an AIP diet I’ve learned how to throw pretty much anything green in a blender and turn it into a delish pesto sauce to use with meat, fish, veggies, and even chips. I really don’t like kale and am always looking for creative ways to use it that a hide it’s rubbery texture and flavor, so pulverizing it is a good way to go. I’ve used kale in pesto before, but this is easily my new favorite way to get the job done. And obviously adding the avocado doesn’t hurt since avocado can cover a multitude of sins.
Pesto is such a versatile sauce. You can put it on chicken, bake it in a frittata, or pile it in a risotto.  Most often I simply put a scoop of it over some roasted chicken and veggies and call it a night.
Now that I’m back to cooking and baking with eggs, I knew this pesto just had to be paired with a fried egg and some crunchy toast. And then obviously we had to throw more greens in the mix because, well, Coronavirus. Thank goodness I’m quarantined away from people because my garlic breath from this stuff is getting pretty bad.

The best thing about these sandwiches is how easy they are! They’re the perfect easy breakfast, brunch, or lunch, without sacrificing flavor. Here’s what you need to make it happen:

Tips for the best pesto sandwiches:

  • You can get creative with the greens you throw in. I love the taste cilantro adds, but you can swap it out for basil or other herbs of your choice, or make a medley of whatever you have on hand.
  • This pesto is also great with lime juice, but I slightly prefer the lemon version
  • If you want to get extra fancy you can toast your bread! That’s too fancy for me though.

INGREDIENTS

  • 4 slices Paleo bread
  • 2 eggs
  • 1/4 cup sprouts
  • 1 large carrot peeled into thin slices
  • 1 cucumber peeled and then sliced lengthwise

For Pesto:

  • 1/2 avocado
  • 3 cups fresh kale
  • 1 tbsp lime or lemon juice
  • 1/4 tsp salt
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp water

INSTRUCTIONS

  1. In a food processor, blend together all pesto ingredients. Set aside.
  2. Fry the two eggs until they are cooked as desired
  3. Spread a good spoonful of pesto on one slice of bread. Layer with cucumbers, carrots, 1 egg, sprouts, and then top with the second slice of bread.
  4. Repeat again with the second sandwich and enjoy!

      I make my own using Cassava Flour but you can also buy Against the Grain’s bread, Mike’s muffins, or wrap it all in a Siete Food’s torilla!
