Grain-Free Garlic Herb Focaccia

Ok guys, where has focaccia been all my life? I mean I know I haven’t been eating gluten for the latter half of my existence, but I still don’t know how it’s taken me THIS LONG to discover this delicious, easy bread! Now every weekend when I’m thinking “what should I bake?” focaccia is close to the top of the list. It’s also always on the menu when I’m making a cheeseboard spread or having company over.

What is Focaccia?

Focaccia is an Italian bread resembling a flatbread or even a pizza crust. It’s usually prepared with olive oil and herbs, such as rosemary. It’s soft and chewy inside, but delightfully crispy on the outside! It takes on the flavor of the herbs and olive oil used in the recipe, so it’s easy to customize to your liking and create endless variations. While most focaccia recipes call for yeast I’ve found it easy to make a grain and yeast free version using cassava flour.

Ingredients for grain and gluten-free focaccia:

This yeast and knead-free focaccia couldn’t be easier! It’s made with only a few ingredients (6 if you don’t include herbs/toppings!) and needs only a few minutes to bake into delicious, crusty bread. Here’s what you need:

Cassava flour: I used Bob’s Red Mill Cassava Flour for this recipe.
Arrowroot starch: Creates a flaky, crunchy exterior to the focaccia.
Baking soda: to add rise to the focaccia
Egg: To bind the focaccia
Water: To add moisture and make a lighter bread.
Extra virgin olive oil: You can really taste the olive oil in this recipe, so I recommend tasting it first to make sure you like the flavor!
Garlic, thinly sliced: I used two cloves and sliced them thin with my favorite Material Kitchen Knives!
Fresh Rosemary: Can substitute dried rosemary if needed
Fresh thyme: Can substitute dried thyme if needed
Extra herbs for topping: I used extra thyme and rosemary
Course salt, for topping: I use Maldon Sea Salt

The process of baking the focaccia is just as straightforward as the ingredient list. You just mix together your ingredients, form a loaf on a parchment-line baking sheet, press some herbs, garlic, and salt into the top and bake! I Let mine cool a bit before serving but it is nice to enjoy it while there’s still some warmth left from the oven.

How to serve grain-free Focaccia

Focaccia can certainly stand all on its own, but I love dipping mine in some extra virgin olive oil and sprinkling it with some extra Maldon Salt. You can also use it as the basis for a grain-free pizza, or serve it with an easy bruschetta. I like dicing tomatoes and stirring them with some herbs and olive oil for an easy dip.

INGREDIENTS

  • 2/3 cup + 1 tbsp cassava flour
  • 1/3 cup arrowroot starch
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1 egg
  • 1/4 cup water
  • 1/3 cup extra virgin olive oil
  • 1 clove garlic thinly sliced
  • 2 tbsp rosemary
  • 2 tbsp fresh thyme
  • Extra herbs for topping
  • Course salt for topping

INSTRUCTIONS

  1. Preheat oven to 375 F and line a baking sheet with parchment paper.
  2. Whisk together  cassava flour, arrowroot starch, salt, baking soda,  rosemary, and thyme.
  3. In separate bowl, mix together egg, oil, and water.
  4. Pour the liquid mixture into cassava flour mixture and fold to combine.
  5. Pour batter onto the baking sheet and smooth into an oval. Top with extra herbs and sea salt, and press the sliced garlic in throughout.
  6. Bake for 20-25 minutes, or until golden on top
