This Paleo Everything Bagel Hummus has all of the flavor of your old favorite bagel, with none of the grains or legumes you would normally see. This hummus is so thick and creamy, you’ll never believe it’s really made out of cauliflower.
Lets start our Monday off with a recap of what I binge-watched all weekend, shall we? It was my birthday, so I had a “no-guilt” policy on the number of episodes of Netflix I allowed myself to watch. Not only did I binge watch season 9 of Master Chef, but I also watched the entire first season of The Sinner. Thats right folks — not one, but two entire seasons. I am deplorable and lazy, and it was thoroughly entertaining. And it was my birthday so you can’t judge me.
I also made 5 new blog recipes, so it wasn’t entirely unproductive. Gotta have background noise or I’ll talk to the food.
Ok, so now I’m regretting the lack of variety in what I watched, because it means I only have 1 season of The Sinner left before I have nothing. Except for the Steven King book I bought two months ago and have yet to finish. (Im saving it for a plane ride… or something.) Jessica Biel has until October to give me another 12-14 episodes or I can’t be a fan of the show anymore. I’ll be forced to move on. I’m sure she’s reading this right now, so let’s consider it handled.
You know whats not handled? I need new tires. I got a flat tire on my birthday because I was ignoring the fact that I needed new tires, so that I could enjoy my birthday. Clearly, that did a lot of good. A super duper nice old man helped me change it because I am inept and small. So I got a flat tire and inadvertently got a pleasant birthday gift from a stranger. I still could’ve done without the entire ordeal, but theres a positive spin to start your week off right.
You know what else you could start your week off with? Everything Bagel Hummus. Yaaaaaaas. I used to eat hummus like crazy until I acknowledged the fact that the legume situation didn’t cooperate with my digestive situation. So for now, I make hummus with cauliflower, and it is dang delicious. AND it’s a vegetable so you’re allowed (and even encouraged) to eat more of it. Win win win win win.
But wait. Did I mention it’s Everything Bagel Hummus? And yet, still Paleo? Oh yes. Get cooking.
Paleo Everything Bagel Hummus
Steam or cook the cauliflower florets until softened -- I steam mine for about 10 minutes.
Add cauliflower, garlic, tahini, lemon, and olive oil into a food processor or high speed blender and blend until smooth. Add salt and pepper to taste.
Garnish with tahini drizzle and Everything Bagel seasoning (I use about 2-3 Tbsp of the Trader Joe's seasoning.) Hummus will keep in the fridge for a week.
