Ok you know what the best ice cream I ever had as a kid was? Friendly’s mint chip ice cream with peanut butter cups on top. Awkward? Yes. But so so amazing. Aside from soft serve ice cream, of course, which belongs in its own category.
I don’t think I’ve had mint chip ice cream in at least 8 years. I know some people are all about that dairy free ice cream life, but I’m just not that into it. I figure if I don’t eat milk because it makes me sick I don’t really want to replace it with things that are full of sugar, even if they are better for you. I know, I’m no fun. I’m really trying to up the fun around here with these smoothies-can you tell?
Oh but first we need to talk about this season of The Bachelor. We’re you as annoyed when Hannah kept popping up as I was? I mean how many seasons of this show does she need to make an appearance on? It’s a bit much. I’m glad it seems like Peter has finally closed that door, but I won’t be shocked if she still manages to come back before the season ends. Also have you ever wondered if they get good food there? It seems like everyone just drinks alcohol all the time. I would be so hungry and cranky if I was on that show. Maybe that’s why there’s so much drama.
Anyways, back to today’s recipe. We all know I’m not a fan of fruit, so my goal for smoothie week was to bring you a bunch of mostly fruitless smoothies that are packed with protein and also low in sugar. I hope you’re as pumped as I am about all of these new smoothie recipes—bye bye boring breakfasts!
Tips for making these mint chip smoothies:
- Add in some fresh mint if you want it get really crazy
- You may need to add more coconut milk or some water depending on how big your avocado is.
Paleo Mint chip Collagen Smoothie
- 2.5 cups full fat coconut milk
- 2 scoops vital proteins collagen or two servings of you fav collagen
- 1 tsp peppermint extract
- 1 avocado
- 2 tbsp Lily’s chocolate chips
- 1 tbsp honey or maple syrup
- 1/2 cup frozen cauliflower
- 1/2 cup ice cubes
Add all ingredients into a high speed blender and blend until smooth. Add more ice to achieve a thicker consistency.
Garnish with desired toppings and enjoy!
