Paleo Sweet Potato Gingerbread Collagen Smoothie

A thick, creamy sweet potato gingerbread collagen smoothie made with no fruit. A great dairy and gluten free snack or breakfast with collagen protein!

 

I’m gonna start a club for non-fruit collagen smoothies. Tell me if you want to join and be our treasurer or something. It’s no secret on here that I’m not a fan of fruit-especially in drinks. Look-I know that having fruit in your drinks gives you more vitamins or whatever, but if I’m going to have a sweet, carb loaded drink, I want it to taste like dessert. I don’t think I’m asking for too much. And then there’s also the fact that I hate bananas, which seem to have a monopoly on the smoothie world.
The more I experiment with my fruitless collagen smoothies, the more I find that sweet potato is a fabulous way to add a good amount of sweetness without getting too sugary or fruity, and you can still add chocolate, almond butter, or in this case, Gingerbread, and it can take on a life of its own.

This sweet potato gingerbread collagen smoothie might be my new favorite go-to. I love that I don’t even feel the need to add honey or any other sweetener to it and it’s still flavorful and dessert like, while still being an acceptable meal. Plus, it’s another way for me to get a dose of collagen—something I try to do twice a day to help with my gut health and hair growth (things I struggle with due to autoimmune disease.)

Tips for making this Paleo Sweet Potato Gingerbread Collagen Smoothie:

  • Use good collagen—I used Vital Proteins, but I also love using Great Lakes for my daily collagen smoothies.
  • Make sure you’re not using hot sweet potato! Let it cool in the fridge or even freezer after cooking before you make this.

INGREDIENTS

  • 2 scoops vital proteins collagen peptides
  • 1 cup sweet potato puree
  • 1.5 cups full fat coconut milk
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 2 tbsp molasses
  • 1 tbsp honey optional

INSTRUCTIONS

  1. Blend all ingredients in a high powered blender until well combines. Add more or less liquid as desired. Serve with whipped cream or a dollop of nut butter!

    Would it be good warm? Like a custardy smoothie?

      Hi Lea! Yes! I would use less coconut milk and make a thicker bowl with it.
