Pesto Pasta and Roasted Vegetables (Grain and Dairy Free)

I live for a dish with pesto. They are truly the best meals. Healthy yet indulgent and bursting with flavor without being too overpowering. Just cover my life in pesto already, please. Or at least my pasta.

This gluten-free pesto pasta is also topped with an abundance of crispy roasted vegetables. I’m so ready for it to be time for fresh summer vegetables and grilling again, but thankfully I’ve still been able to get lots of amazing fresh vegetables at the farmers market that have kept me sane as I’ve been recipe creating through the winter. I was hardly able to eat any vegetables last year, so it’s been a whole new world getting to cook with all of these fun seasonal ingredients again!

Now that you’ve got your enzymes, it’s time for a veggie packed pasta dish! Here’s what you need to make it happen:

Cassava Flour Pasta

Most gluten free pasta is pretty terrible. Which is why I never use it. Thankfully, cassava flour pasta has been a game changer! It’s the most similar to regular pasta out of anything that I have tried. Of course, you can always use a different kind of pasta depending on what your dietary preferences are. They will all work the same in this case!

Dairy-Free Pesto

I’m in the process of adding dairy back into my life but I’m not all the way there yet, so I elected to make a vegan pesto using basil, cashews, and nutritional yeast. Of course, you can always make a regular cheesy pesto if you can tolerate it! More power to you.

Cauliflower and Zucchini

I roasted baby cauliflower and zucchini for use in this pasta dish. Of course, you can use whatever veteables you have on hand to customize this pasta and make it your own. Broccoli, eggplant, bell peppers, and mushrooms are just a few of the veggies I image would go perfectly here!

Pesto Pasta and Roasted Vegetables (Dairy Free)

INGREDIENTS

  • 1 Box Cassava Fusilli

For vegetables:

  • 1 tbsp olive oil
  • 1/4 tsp sea salt
  • 2 cups baby cauliflower or regular cauliflower florets
  • 2 zucchini sliced

For pesto:

  • 1 cup fresh basil
  • 1/3 cup cashews or nut of choice
  • 2 tbsp olive oil
  • 3-4 tbsp water
  • 1 tsp salt
  • 1 clove garlic
  • 1/4 fresh lemon squeezed (about 1-2 tablespoons juice)

INSTRUCTIONS

  1. Preheat oven to 400 F. Toss vegetables with oil and salt until combined, then spread evenly on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until vegetables are soft. Remove from the oven and flip the veggies halfway through for even roasting.
  2. To make pesto: combine all pesto ingredients in a blender or food processor and blend for 2 minutes, or until smooth. Place in a small bowl and set aside.
  3. To make pasta: Boil 3 quarts of water in a pot. Add a pinch of salt and pasta and cook for 10 minutes. Drain and toss with 2/3 of the pesto. Top with roasted vegetables and serve with extra pesto.
